Grilled street corn has become a staple for backyard BBQ as it is simple to prepare and pairs well with just about anything. Grilled Street Corn

Ingredients
4 ears of corn
1/2 cup (1 stick) unsalted butter, softened
2 Tbs fresh cilantro, finely chopped
1 lime, juice and zest
1/2 tsp salt
1/4 tsp black pepper
3 Tbs vegetable oil
1/4 cup Cotija cheese, crumbled
Directions
  1. Remove the outer husks of the corn, and discard outer layer.
  2. Pull back remaining husks, leaving them intact.
  3. Remove the silks.
  4. Bring the husks back up around the corn.
  5. Place corn in a baking dish.
  6. Cover with water. Let corn soak for 1 hour.
  7. In a bowl, combine the butter, cilantro, lime juice, lime zest, chipotle powder, salt and pepper.
  8. Set the mixture aside.
  9. Heat a grill to medium-high.
  10. Rub the corn and husks with oil.
  11. Place corn on the grill.
  12. Cook, while turning, for about 4 minutes per side.
  13. Turn if husks begin to burn.
  14. When corn is tender, pull back some of the husks.
  15. Spread half of butter mixture over the top.
  16. Remove from grill. Place in a baking dish.
  17. Spread remaining butter over the top.
  18. Place the dish in a 200° F oven for 5 minutes or until ready to serve.
  19. Sprinkle corn with crumbled cheese.
  20. Serve with lime wedges.
